Aponte's Honey at Black Gold
In Southeast Colombia, along the Ecuadorian border, lies the region of Nariño and within it El Tablon de Gómez. High in the Andes Mountains, Aponte Indigenous Reserve is located here and home of the Inga coffee farmers. This native civilization believes it is their duty to act as the guardians of the Earth and they accomplish this with their distinct style of honey processing. As opposed to washing, almost 80% of the coffee grown here is “Honey” processed, preserving water and paying homage to the lands. This more naturalistic approach creates sweet flavors of vanilla, orange peel, and sugarcane.
